One of the questions we get asked a lot at Favourfairy is ‘will my chocolates still be fresh on my wedding day?’ so we’ve put together a few pointers to make sure your chocolates remain as delicious as the day they leave us.
First things first – ask yourself do you really need to buy them 6 -8 months in advance?
If you buy them too early there is longer for something to happen to them, we have had many a bride calling us in panic as she has to replace chocolates which have mysteriously disappeared as others help themselves to ‘just one’…….
Consider if possible leaving it till about 6 – 8 weeks before the wedding. This way you’ll have the freshest possible chocolates and you’ll only need to store them for a short time.
Do not store them in the fridge as this will cause the chocolate to ‘sweat’ and ultimately the chocolate will ‘bloom’ as the cocoa butter rises to the surface. The ideal temperature is between 16 – 18C.
Once you have received them place the chocolates in a storage container and leave them in a cool, dry place away from strong scents, sunlight and any heat sources. Finally a cautionary tale about the bride who stored them under her bed who ended up with a puddle of chocolate……. always check where your heating pipes run.
